益生菌和糖对发酵八仙草品质的影响及饲用效果评价

Effects of Probiotics and Sugar on the Quality of Fermented Galium aparine and Evaluation of Feeding Effect

摘要: 本研究旨在探讨添加益生菌和葡萄糖对发酵八仙草(Galium aparine)品质的影响及饲用效果评价。将采集的八仙草分为自然发酵组、益生菌组、糖+益生菌组、糖组,分别在第0,7,15,30,60,120天测定八仙草品质的变化,在发酵第120天检测分析微生物群落并进行饲用效果评价。结果表明,与自然发酵组相比,在发酵120天后,各试验组的pH值均显著降低(P<0.05);菌群分析显示,与自然发酵组相比,糖+益生菌组菌群分类单元的数量增加,厚壁菌门相对丰度降低,变形菌门和拟杆菌门相对丰度提高,乳酸菌属比例增加。饲用效果评价显示,日粮中添加20%发酵八仙草干粉对小鼠各指标无显著影响。综上,益生菌和糖可提升发酵后八仙草的品质,降低pH值,提高菌群的丰度,可部分代替饲料使用。

Abstract: The aim of this study was to investigate the effects of probiotics and sugar on the quality of fermented Galium aparine and evaluate feeding effect. The four test groups were divided,including natural fermentation group,probiotic group,glucose-probiotic group,and glucose group. The variation of pH value and nutrient composition of Galium aparine were measured at 0,7th,15th,30th,60th,and 120th day,respectively,and the microbial community and bioactivity were evaluated at the 120th day of fermentation. The results showed that the pH values of all experimental groups were significantly lower than that in the natural fermentation group after 120 days of fermentation (P<0.05);Analysis of the bacterial flora showed that compared with the natural fermentation group,the number of bacterial operational taxonomic units (OUTs) increased in the sugar+probiotic group,the relative abundance of the thick-walled phylum decreased,the relative abundance of the Proteobacteria and Bacteroidetes phylum increased,and the proportion of the Lactobacillus spp. increased. Evaluation of feeding effect showed that the addition of 20% fermented Galium aparine dry powder to the diet had no significant effect on the indicators of mice. In conclusion,probiotics and sugar enhanced the quality of fermented Galium aparine,reduced pH value,increased the abundance of bacterial flora,and could be used to partiallyreplace feed.
